Today I baked bread! It is cooling in the kitchen now & it smells delicious! 

I used a recipe from Alex of French Guy Cooking with a few alterations.

I used half whole wheat & half AP flour. I also let the dough rest & autolyse before I kneaded it.  I also made 2 smaller loaves of bread out of half of the dough & I froze the rest of the dough for later. There is only 2 people in my house, so we don't go though bread that fast.

 Happy things 

1) Going back to the office around lunch and having my coworkers welcome me back was really nice. ☺☺

2) it was cake day at work and my boss saved me a piece 🍰😊

3) a different coworker got me a coffee from the local coffee shop ( hence the late night posting.... Imma be really tired in the morning. I'm going to try to not be grouchy. )  

4) I spun some yarn on my spindle for the first time in years! Got some roving type yarn recently and J gave me the idea to try spinning it. Works great and i have quite a bit. So happy as i have kinda lost my knitting mojo since x mas.

Dinner tonight was meatloaf and mashed potatoes. I made Alton Brown's Meatloaf.   I successfully cut the recipe in half. Next time I want to make the full recipe for leftovers and add spinach. And remember to serve it with a vegetable! 


Planning on making oats of some kind for breakfast. πŸ“πŸ“πŸŒ

I Did List

Instead of a to do list, this is an I did list. What's on your list?

- Went to the Doctor today for the 1st time in a long time. Everything went fine and my doc listened and belived me! I will pick up my med later this week when we go to get J's. 😁😊

- Came home and made cookies and dinner. Tried a new chocolate chip cookie recipe. They are cooling now. πŸͺπŸͺ

- Ordered loose leaf tea and infuser from amazon the other day. I am waiting on them to arrive after the package got delayed due to the weather in Dallas. This is my first loose leaf tea and I am super excited. I got a black tea sampler! πŸ˜β˜•
