My partner & I watched the Inauguration live & I am still having feels. Mostly I am relived that Trump is out of power & we have a real President. & Vice President. I am thrilled about VP Harris being the 1st woman, Asian American & African American in this office. I am hopeful about Covid response now that we have someone who is taking it seriously & listening to science. I cried during the inauguration at various points. I loved seeing the inclusivity & that everyone was wearing masks & that the podium was being wiped down between speakers. 





President Biden is starting off the administration with a challenge. 100 day mask wearing challenge

As part of those executive orders people will be required to wear masks on federal property, at airports, and on buses, trains, and planes. As someone who has been wearing a mask to take our the trash or go to the corner store! Thank goodness! 

If you missed it, President Biden's inauguration was inclusive, including ASL  & "stand if you are able" being used for the ceremony

It's World Diabetes Day

"Diabetes Matters” will aim to raise the profile of diabetes and unite voices in diabetes awareness for World Diabetes Day 2020 and beyond. Today I reached out to my parents to check on my Dad, who has diabetes. If you have diabetes, I hope you are doing ok today. <3

  Several artists have come out with new Christmas albums recently. So I have started listening to Christmas music despite it not being Thanksgiving here. :D

       This has the song Ma’oz Tzur which is a jazzy version of the traditional Hanukkah song. He & his jewish wife sing together on this track. I love it & have listened to it at least 3 times in as many days.

 This week i have done fairly well on making meals at home. I am trying to keep doing that for several reasons- money, better quality & taste, more variety in food. 

Risotto with bacon, roasted bell pepper & tomato. Finished with butter, parm cheese & lemon juice. Rather rich but it did have some veggies. Very comforting. Based on hello fresh recipe. 

Pot roast with carrots & russet potatoes. Also made dinner rolls to go with the leftovers. Very good. Remember to make rolls ahead of time so we can have them with the meal & not just the leftovers. Recipes for Instant pot pot roast & dinner rolls. Do put honey butter on them if you have honey. 

Meatloaf with mashed potatoes and green beans. The meatloaf was my go to alton brown recipe with some alteration. I used a bit less meat, 1 lb each of ground chuck & ground turkey. Added 2 big handfuls of spinach. I used rits crackers since i didn't have any bread on the house. I have also used breadcrumbs from homemade bread & the crutons in the recipe before. They were all fine.  Mashed potatoes were done in the instant pot, though I did make sure to take the skins off. The green beans were good & I was surprised we ate the whole 1lb i made. I could have cooked them a bit longer but they were fine. 

Any meals you have made lately that were really good? The pot roast was the new recipe I tried & it is already saved for future use. 😁

Youtube has stated they are going to turn off community captions and are planning on replacing them with a paid model. There are sooo many reasons this would be a Bad idea. Disability, being Deaf/Hoh, foreign language speakers/watchers to name a few. Plus youtube tends to have fairly good captions. A lot of youtubers are very niche and with have specific vocab that a lot of people, including captioners may not know. I use captions on youtube, netflix, hulu, most places that offer it. Most things have errors but YouTube tends to have less due to community members being able to fix it.

 New recipe tried today. Pork & cabbage gyoza.

They turned out well & now we have some in the freezer for later. I didn't have any green onions so I subbed the same amount of yellow onions. Plus the recipe filling matched the amount of skins that came in pack I got from the store. Big plus!
